RECIPES....Let's Help Each Other Out!

  1. TURKEY MEATLOAF (By Amberly)

    Grill chopped onion and fresh spinach using PAM spray until cooked. Then mix together:
    cooked onion/spinach
    raw ground turkey
    1 pkg meatloaf seasoning
    about 1/8 cup bread crumbs
    generous amount of grated parmesan cheese
    few squirts of 1-carb ketchup :)

    Once mixed, put into 8x8 pan in loaf shape. Spread a little more 1-carb ketchup on top.
    Bake @ 350 degrees until done, about 50-60 min

  2. HONEY MUSTARD CHICKEN (By Amberly)

    I'm going to try to create this tonight. I'll let you know how it goes. My plan is:
    Dip raw chicken tenders in Fat Free Honey Mustard Dressing, then in grated parmesan cheese/Italian Seasoning. Bake @ 350 degrees, then top with ICBNB (I Can't Believe It's Not Butter spray)

  3. GARLIC TOMATOE COD (By Amberly)

    Heat EVOO (Extra Virgin Olive Oil) in pan. Season thawed cod with pepper and generous salt. Grill for about 2 minutes on each side.

    Mix 1 small can of tomatoe paste with salsa (I made homemade salsa with tomatoes, green onion, cilantro, jalenpenos, pineapple, and a lot of salt and pressed garlic). Add lowfat milk to thin it.
    Pour over cod and continue to grill until cooked (about 8 more minutes).
    *Save some sauce to top over the finished product! YUM!

  4. By The Way.... the Honey Mustard Chicken turned out good. Not as good as the original, but great for a lunch snack.
    Also, the Turkey Meatloaf is Outstanding!!
    The Tomatoe Cod.... you could substitute shrimp or talapia. I buy the frozen cod and talapia from Costco.

  5. OK, so here is my review on how my eating plan is going...... I can tell that my mind is trained to think "potien + veggies or fruit" every time I eat. I am thrilled with that since Carbs stick to my body. I drink water all the time so that isn't hard. The thing that I need more work on is eating frequently. With a busy mom schedulle, I find it very hard to remember to eat. I get 3 meals for sure, but forget the others. Gotta try harder for more results. Oh, thanks Amberly for recommending Parmasean Cheese-it's great on everything!! Wish us luck!

  6. So this plan is difficult for a nursing mom. My tata's need the carbs. So I hope you all don't mind but I am going to follow weight watchers for a little bit and then make a switch over when Broden is done with me. Any objections?? Good. I signed up for 3 months prepaid. Wish me luck!! Can I still be apart of this blog if I don't follow the plan? I can swap recipes weight watcher style....

    Sat-lean steak and mushroom
    Sundy-Super Bowl Party with PIZZA!!
    Monday-Taco Salad
    Tuesday-Turkey Burgers
    Wednesday-Chicken Parmasean with veggies
    Thursday-Spaghetti for kids and leftovers for us.
    Friday-Omlettes
    Wish us luck! Work-outs are going great and running too!
